No Bake Keto White Chocolate Cheesecake


For the base:
2 cups almond flour
1/3 cup melted butter
3 tbsp sweetener
Pinch cinnamon
Pinch salt

For the filling:
250g cream cheese (at room temperature)
250g thickened cream
200g @vitawerx White Chocolate
2 tsp fresh lemon juice
2 tsp tsp vanilla extract


Use an 8-inch springform pan
1. Combine all the base ingredients together, mix well & press into the base of your springform pan (could also use individual muffin liners if making mini cheesecakes)
2. Melt white chocolate and allow to cool (until almost room temperature)
3. Using an electric mixer, mix the cream cheese until it is smooth. Gently fold in the melted white chocolate
4. Whip the thickened cream, then fold into the white chocolate mixture in a few batches. Add lemon juice and vanilla extract
5. Pour mixture into the spring form pan
6. Cover & refrigerate overnight
7. Top with berries & more white chocolate & enjoy
