KETO CHEESECAKE BROWNIE
INGREDIENTS
- 1/2 cup butter
- 1/4 cup chocolate, melted (I used @vitawerx )
- 1/4 cup cacao powder
- 1/2 cup almond flour
- 1/2 tsp baking powder
- 1/2 cup erythritol
- 2 eggs
- Pinch of salt
For Cheesecake:
- 250g cream cheese
- 1/4 cup sweetener
- 1 tsp vanilla
- 1 egg
DIRECTIONS
- Combine the cacao powder, almond flour, baking powder, sweetener and salt in a bowl
- In a separate bowl melt the chocolate and butter together (either in a double boiler or in 20 second intervals in the microwave – once warmed through then stir until the chocolate melts – make sure it’s not too hot)
- Add chocolate mixture to the eggs. Combine with dry ingredients
- For the cheesecake: combine cream cheese, sweetener, vanilla and the egg. Mix until combined
- Line an 8×8 inch pan with parchment paper then add most of the brownie mixture (reserve about a 1/4 cup)
- Pour cheesecake over the brownie layer
- Add remaining brownie batter in 5 dollops then use a skewer to swirl the batter
- Bake at 180°C (350°F) for approximately 20 minutes. Let them set for 1 hour before serving
